Best known for their roles in Game of Thrones and The Last of Us, Ramsey leads a busy life all while following a plant-based diet. So it was ultra-generous of them to spare the time and provide their four-ingredient puff pastry appetizer in this year’s Veganuary Celebrity Cookbook just in time for the holidays.

This recipe calls for vegan cheese and pesto, which is great for those following a vegan eating pattern—but this recipe would work just as well with non-vegan alternatives. We suggest sticking with the plant-based ingredients so all of your guests can enjoy!

Bella Ramsey’s Pesto Pastry Spirals

Ingredients

  • 1 frozen puff pastry sheet, thawed 
  • Vegan pesto (this recipe also works with tomato sauce)
  • Vegan cheese 
  • Lots of basil 
  • Salt and pepper 

Directions

Step 1

Roll out the pastry sheet. Cover with pesto, but leave a thumb width of space around the edges.

Step 2

Sprinkle on vegan cheese and anything else you fancy, e.g. capers, olives, etc. Wash, dry and tear basil leaves if fresh and distribute on top of the cheese. Season with salt and pepper. 

Step 3

Roll up the loaded pastry sheet lengthwise until you have a log. Slice the log into little spirals and lay them flat on a lined baking tray. 

Step 4

Bake them in the oven for about 10 to 15 minutes, or until golden brown, at 350° F. Let cool and serve. (Ramsey notes: Eat them all!)
