The holiday season is meant to be celebrated with cozy dishes, and that includes comforting, cheesy veggie side dishes. And actor, comedian and now-podcast host Amy Poehler just shared one of her seasonal favorites in an unexpected interview.
Ahead of Thanksgiving, an delightfully unexpected guest appeared on Good Hang with Amy Poehler: the culinary queen herself, Ina Garten. The episode featured a plethora of foodie moments, including Poehler sharing her love for Garten’s famous roast chicken recipe. Towards the end of their conversation, Poehler asks the Barefoot Contessa for the best way to cook carrots; she does not hesitate to answer.
“Roasted with olive oil, salt and pepper,” Garten simply puts it. And sometimes she’ll add “syrupy balsamic vinegar” for an edge. In the words of the wise, how easy is that? But Poehler personally loves upgrading her carrots with a couple extra ingredients.
“Sometimes I put feta and honey on my carrots,” Poehler shares—and we agree with Garten’s response that that sounds “fabulous.” Per Garten, feta is good on everything, and carrots are no exception. The carrots’ sweetness embraced by honey and balanced with savory cheese is bound to be incredible.
In lieu of Parmesan, feta would be great as a topping on our Hot Honey Carrots post-roast (not to break the fourth wall, but I absolutely love this recipe, so I will be trying it Poehler’s way ASAP). Or, try our highly-rated Balsamic Oven-Roasted Carrots for Garten’s spin.
Carrots make a great holiday side dish because they pair well with pretty much any protein. Whether you’re making a crispy roast chicken or honey-glazed ham this holiday season, be sure to add a simple carrot side to your menu.
